Decadent eclairs filled with rich cream and topped with luscious melted chocolate.
Ingredients:
  • 250ml thickened cream
  • 24.00 gm icing sugar
  • 4.40 gm vanilla extract
  • 150g dark chocolate, melted, cooled
  • 150g unsalted butter
  • 225g plain flour
  • 7 eggs
Instructions:
  • In a saucepan over low heat, gently melt the butter with 1 1/2 cups of water. Quickly stir in the flour until it pulls away from the sides of the pan. Then, add the eggs one at a time, beating thoroughly after each addition using an electric hand mixer if desired.
  • Preheat your oven to 220°C. Grease and line 2 baking trays. Fit a 1.5cm round nozzle onto a piping bag. Fill the bag with pastry mixture and pipe thirty 8cm lengths onto the trays, leaving space for spreading.
  • Bake for 20 minutes or until golden brown. Remove from oven and promptly make a small slit in each pastry to release steam. Let them cool, then cut each pastry in half.
  • Prepare a luscious cream by whipping together sugar and vanilla. Fill the delicate eclairs with this heavenly mixture and generously top with melted chocolate.
