Kid-friendly red potato salad tossed in a tangy herb vinaigrette, no mayo. Leave the skins for extra color pop.
Ingredients:
  • 0.5 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 red onion, thinly sliced
  • 5 large red potatoes
Instructions:
  • Combine the olive oil, wine vinegar, oregano, parsley, and onion in a small bowl, mix well, and set aside.
  • Place the potatoes into a generously sized pot filled with boiling, lightly salted water. Cook for roughly 20 minutes, or until the potatoes can be easily pierced with a fork. Strain out the water and allow the potatoes to cool.
  • Once chilled, peel and chop. Transfer to a spacious bowl, mix in dressing, and season with salt and pepper. Toss gently until well coated, then cover and refrigerate for a few hours or overnight.
