Moist whole wheat banana cranberry muffins with plenty of bananas. Can also be baked as a delicious loaf.
Ingredients:
  • 3 ripe bananas, mashed
  • 0.66666668653488 cup white sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1.5 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 2 tablespoons vegetable oil
  • 1 cup frozen cranberries
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and get those muffin cups greased up or lined with paper liners.
  • In a bowl, mash bananas with sugar, then mix in egg and vanilla. In a separate bowl, combine flour, baking powder, baking soda, and salt. Gently stir the dry ingredients into the banana mixture until just combined. Fold in oil and cranberries, then spoon batter into muffin cups.
  • Bake until a toothpick comes out clean, 22 to 26 minutes in the preheated oven.
