Edwina's red cabbage, spanish onion and pear salad

Tangy cabbage and pine nut salad with sweet pear.
Ingredients:
  • 750.00 ml shredded red cabbage
  • 1 small red onion, thinly sliced
  • 3 corella pears, core removed, thinly sliced
  • 40g pine nut
  • 36.40 gm olive oil
  • 40.00 ml white wine vinegar
  • 11.80 gm wholegrain mustard
  • salt and cracked black pepper
Instructions:
  • In a large bowl, toss together the cabbage, onion, and pear.
  • In a small fry pan over medium heat, toast pine nuts for 2 minutes, stirring occasionally, until they turn golden brown. Remove from heat and set aside.
  • Combine the oil, vinegar, mustard, salt, and pepper in a bowl and whisk until fully incorporated.
  • Combine the pine nuts with the cabbage mixture and generously drizzle with the dressing before serving.
