Eggplant, olive and feta patties

Indulge in our budget-friendly vegetarian patties for a versatile and delightful meal.
Ingredients:
  • Olive oil cooking spray
  • 1 large eggplant, thinly sliced
  • 375.00 ml pitted kalamata olives, thinly sliced
  • 375.00 ml fresh white breadcrumbs
  • 125.00 ml finely grated parmesan cheese
  • 100g feta, crumbled
  • 1 egg, lightly beaten
  • 125.00 ml chopped fresh basil leaves
  • 1 long red chilli, finely chopped
  • 62.50 ml plain flour
  • Vegetable oil, to shallow-fry
  • Rocket leaves, to serve
  • Lemon wedges, to serve
Instructions:
  • Coat a frying pan with oil and heat over high heat. Cook the eggplant in batches for 2 minutes on each side, or until golden brown. Allow it to cool before finely chopping it.
  • In a bowl, combine eggplant, olives, breadcrumbs, parmesan, feta, egg, basil, and chili. Shape 12 patties using ¼ cup of mixture each. Coat each patty in flour and place on a baking tray. Repeat for the remaining patties.
  • In a large frying pan, heat oil over medium-high heat. Cook patties for 2 to 3 minutes per side until they are golden and crisp. Place them on a plate with paper towel. Serve alongside rocket and lemon wedges.
