Satisfying tomato and eggplant dish with guilt-free Parmesan for a savory, cheesy delight.
Ingredients:

  • 1 eggplant, sliced into 1/2 inch rounds
  • 1 tomato, sliced
  • 0.25 cup grated fat-free Parmesan cheese
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and spritz a baking sheet with nonstick spray.
  • Lay out the eggplant rounds on the baking sheet and generously sprinkle half of the Parmesan cheese over them. Top each round with a tomato slice and finish by sprinkling the remaining Parmesan on top for a delicious finish.
  • Place the dish in the hot oven and bake for 10 to 15 minutes.
