Elegant Brunch Chicken Salad

Delicious chicken salad with homemade mayo, red grapes, pecans, and blue cheese.
Ingredients:
  • 1 pound skinless, boneless chicken breast halves
  • 1 egg
  • 0.25 teaspoon dry mustard
  • 2 teaspoons hot water
  • 1 tablespoon white wine vinegar
  • 1 cup olive oil
  • 2 cups halved seedless red grapes
  • 1 cup coarsely chopped pecans
  • 1 cup coarsely crumbled blue cheese
Instructions:
  • First, bring a large pot of water to a rolling boil. Then, gently add the chicken and let it simmer until fully cooked, about 10 minutes. Drain the chicken, allow it to cool, and then cut it into cubes.
  • While the chicken is boiling, prepare the mayonnaise: In a blender or using a hand-held electric mixer, combine egg, mustard, salt, water, and vinegar and beat until light and frothy. Gradually add oil one tablespoon at a time, ensuring thorough mixing after each addition. Once the mixture starts to thicken, increase speed of adding oil. Keep mixing until the mixture achieves a creamy mayonnaise consistency. Remember, the more oil you add, the thicker it becomes; you may not require the full cup of oil.
  • Combine chicken, grapes, pecans, blue cheese, and 1 cup of mayonnaise in a large bowl. Mix well to coat everything evenly, adding more mayonnaise if needed. Chill before serving.
