Spanish-inspired rice with fluffy texture, tangy apple cider vinegar, and peas and carrots throughout.
Ingredients:
  • 2 cups water
  • 1 tablespoon vegetable oil
  • 1 tablespoon minced garlic
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons ground turmeric
  • 1 cup long grain white rice
  • 1 cup frozen peas and carrots, thawed
Instructions:
  • Combine water, vegetable oil, garlic, vinegar, turmeric, and salt in a 2-quart saucepan. Cover and bring to a boil.
  • Gently fold rice into the bubbling mixture. Cover and let it simmer on low heat until all liquid is absorbed, approximately 20 minutes.
  • In a large mixing bowl, combine rice with peas and carrots, folding gently to mix.
