Summer Blueberry Pound Cake: A stylish showcase for fresh blueberries.
Ingredients:
  • cooking spray
  • 3 cups cake flour, divided
  • 0.5 teaspoon salt
  • 2 cups white sugar
  • 1 cup butter, at room temperature
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a fluted tube pan, like a Bundt® pan, with cooking spray.
  • In a small bowl, combine 2 3/4 cups of flour with baking powder and salt; set aside.
  • In a large bowl, mix sugar and butter until creamy using an electric mixer. Add eggs one at a time, beating well after each. Stir in vanilla extract until fluffy.
  • Combine the flour mixture with the wet ingredients until fully mixed. Coat blueberries with the remaining 1/4 cup of flour. Gently incorporate the coated blueberries into the batter. Transfer the batter into the prepared pan.
  • Bake in the preheated oven for about 35 minutes, or until a toothpick inserted into the center comes out clean.
