Hearty slow-cooked chicken with bell peppers, onions, and mushrooms in a savory red wine tomato sauce, perfect with pasta.
Ingredients:
  • 1 cup chicken stock
  • 1 (28 ounce) can diced tomatoes
  • 1 cup dry red wine
  • 2 tablespoons tomato paste
  • 2 cubes chicken bouillon
  • 1.5 pounds skinless, boneless chicken breast halves
  • 2 tablespoons dried Italian seasoning
  • 3 tablespoons extra-virgin olive oil, or as needed
  • 2 bell peppers, thinly sliced
  • 1 red onion, thinly sliced
  • 1 cup sliced crimini mushrooms (baby bella)
  • 0.25 cup all-purpose flour
  • 1 cup sliced black olives
  • 3 tablespoons prepared pesto (Genovese)
  • 1.5 teaspoons white sugar, or to taste
Instructions:
  • Turn the slow cooker to High to preheat.
  • Combine tomatoes, wine, chicken stock, tomato paste, and chicken bouillon in a large bowl. Prepare chicken by trimming as needed, then season with Italian herb blend.
  • In a skillet over medium-low heat, warm olive oil. Sear chicken breasts until golden, about 3 to 5 minutes each side. Then, place chicken and its juices into the slow cooker.
  • In a skillet, sauté bell peppers, onion, mushrooms, and garlic with extra olive oil if necessary until the onion turns translucent, roughly 5 minutes. Add flour and cook until vegetables are tender, about 5 minutes.
  • Combine the tomato mixture, bring to a boil, and simmer until slightly thickened for about 5 minutes. Stir in olives and transfer the mixture to a slow cooker.
  • Lower slow cooker to Low heat and continue cooking until chicken is melt-in-your-mouth tender, about 5 1/2 to 6 1/2 hours. Mix in pesto and sugar, then cook for an additional 30 minutes.
