Buffalo meat gives a unique, sweet flavor twist to classic meatloaf.
Ingredients:
  • 1 slice multigrain bread
  • 1 pound ground buffalo meat
  • 1 onion, diced
  • 1 egg, lightly beaten
  • 1 teaspoon mustard powder
  • 0.75 cup canned diced tomatoes, drained
  • 1 dash ground black pepper
  • 0.33333334326744 cup ketchup
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C). Crumble the bread slice into crumbs and set aside, then grease an 8x8 inch baking dish.
  • Combine ground buffalo meat, onion, egg, ground mustard, tomatoes, salt, pepper, and bread crumbs in a large bowl until fully incorporated.
  • Shape the meat mixture into an 8x4 inch loaf and center it in the baking dish. Spread ketchup over the top and sides of the meatloaf.
  • Cook in a preheated oven until meat is cooked through and ketchup caramelizes into a glaze over the meatloaf, about 1 1/2 hours. Rest for 10 minutes before serving.
