Tender chicken thighs in rich tomato sauce create an effortless Italian feast bursting with flavor, ready in just over an hour.
Ingredients:
  • 2 tablespoons olive oil
  • 6 boneless, skinless chicken thighs - fat trimmed
  • 1 (8 ounce) package sliced fresh mushrooms
  • 2 cloves garlic, minced
  • 1 (28 ounce) can diced tomatoes with juice
  • 1 cup dry white wine
  • 0.5 cup orange juice
  • 2 tablespoons dried rosemary, or to taste
Instructions:
  • In a skillet over medium heat, heat olive oil and sear the chicken thighs until golden on both sides, about 5 minutes per side. Remove and set aside.
  • In the same skillet, sauté the onion and mushrooms until mushrooms have softened for about 10 minutes. Add garlic and cook until fragrant for 1 to 2 more minutes.
  • Combine the tomatoes with their juice, white wine, orange juice, rosemary, salt, and black pepper, stirring well until fully mixed.
  • Add the chicken pieces along with any juices to the skillet, cover, and bring to a boil. Simmer over medium-low heat until the chicken is tender and cooked through, about 30 to 40 minutes.
