Enhance zucchini bread with zesty lemon for a burst of citrus freshness.
Ingredients:
  • 1 teaspoon white sugar
  • 3 eggs
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 1 lemon, zested
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 2 cups grated zucchini
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then generously grease 2 loaf pans and sprinkle sugar into the bottom and on the sides of the pans for a delicious caramelized crust.
  • In a large bowl, whisk together eggs, 2 cups of sugar, vegetable oil, vanilla extract, lemon extract, and lemon zest until well combined.
  • Combine the flour, salt, baking soda, and baking powder in a separate bowl. Blend them into the egg mixture until a thick batter forms. Gently fold in the zucchini and transfer the mixture into the prepared loaf pans.
  • Bake in the oven until a toothpick inserted in the center comes out clean, approximately 1 hour. Allow to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
