Decadent brownies with rich semisweet chocolate batter and sweet shredded coconut.
Ingredients:
  • cooking spray
  • 1 cup canola oil
  • 0.5 cup semisweet chocolate chips
  • 2 cups white sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1.25 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups sweetened shredded coconut, divided
  • 1 cup semisweet chocolate chips
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and grease a 9x13-inch baking pan lightly with cooking spray.
  • In a saucepan over very low heat, gently melt 1/2 cup of chocolate chips with canola oil until smooth, stirring for approximately 5 minutes. Allow it to cool for another 5 minutes.
  • In a large bowl, whisk together sugar, eggs, and vanilla extract until smooth. Gently fold in the melted chocolate mixture. Gradually sift in flour, baking powder, and salt until fully incorporated. Lastly, gently fold in 1 1/2 cups of shredded coconut and chocolate chips into the batter.
  • Spread the batter evenly in the baking pan, then generously sprinkle the remaining 1/2 cup of shredded coconut on top.
  • Bake in the preheated oven for 35 to 40 minutes until edges pull away from the sides of the pan. Allow to cool for about 15 minutes before cutting into squares.
