Quick and easy taco casserole: Layers of chili, corn chips, cheese, lettuce, and tomato topped with salsa. Use vegetarian chili for a lighter option. Double the recipe for a larger batch in a baking dish.
Ingredients:
  • 6 cups corn tortilla chips
  • 2 cups vegetarian chili with beans
  • 1 cup shredded Cheddar cheese
  • 2 cups shredded lettuce
  • 2 roma (plum) tomatoes, chopped
  • 0.5 cup salsa
  • 0.25 cup sour cream
Instructions:
  • Preheat your oven to 350°F (175°C) for perfect cooking temperature.
  • Spread a layer of chips in a 9x9-inch baking dish. Pour the chili directly from the can over the chips. Sprinkle shredded cheese on top.
  • Bake in the preheated oven for 20-25 minutes, until the chili is bubbling and the cheese is melted. Top with lettuce, tomato, sour cream, and salsa in the pan or serve toppings separately for picky eaters.
