Banana muffins: a delicious way to enjoy a healthy breakfast or snack!
Ingredients:
  • 3 ripe bananas, mashed
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups whole wheat flour
  • 1 cup rolled oats
  • 0.5 teaspoon ginger
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 12 cup muffin pan with paper liners or a coat of cooking spray.
  • Combine bananas, brown sugar, egg, vanilla, and oil in a large bowl. Add whole wheat flour, oats, cinnamon, ginger, baking powder, and baking soda. Mix until blended. Spoon batter into muffin cups.
  • Bake in the preheated oven for about 25 minutes until the tops bounce back when lightly touched. Allow to cool in the pan for a few minutes before removing.
