Whip together gelatin, egg whites, and sugar syrup to create fluffy homemade marshmallows that can be shaped into festive holiday creations.
Ingredients:
  • 1 cup confectioners' sugar for dusting
  • 2 cups white sugar
  • 1 tablespoon light corn syrup
  • 1.25 cups water, divided
  • 4 tablespoons unflavored gelatin
  • 2 egg whites
Instructions:
  • Generously sprinkle confectioners' sugar over a 9x9 inch square dish.
  • Combine white sugar, corn syrup, and 3/4 cup water in a small saucepan over medium-high heat. Cook until the mixture reaches 250-265°F (121-129°C) or until a small amount dropped into cold water forms a firm ball.
  • As the syrup heats up, pour the rest of the water into a metal bowl and gently sprinkle gelatin on top. Place the bowl over simmering water until the gelatin dissolves completely. Keep it warm until the syrup reaches the right temperature. Take the syrup off the heat and whisk in the gelatin mixture. Set it aside. Enjoy the process!
  • Whip egg whites in a separate bowl until they form soft peaks. While continuing to beat, slowly pour in the syrup mixture until the egg whites become very stiff. Mix in the vanilla. Spread the mixture evenly in the prepared pan and allow it to rest for 8 hours or overnight before slicing.
