Quick and easy pickled eggs, ready to enjoy in just three days. Perfect for a homemade holiday gift!
Ingredients:
  • 12 large eggs
  • 1 cup white vinegar
  • 0.5 cup water
  • 1 medium onion, sliced
  • 2 tablespoons coarse salt
  • 2 tablespoons pickling spice
  • 5 black peppercorns
Instructions:
  • Collect all the ingredients.
  • In a large pot, gently nestle the eggs and cover them with cold water. Once the water reaches a boil, promptly remove from heat, cover the pot, and allow the eggs to sit in the hot water for 10 to 12 minutes.
  • Strain eggs under cold water for 1 minute, then let sit in cold water until cool, about 2 to 3 minutes. Peel the eggs and place them in a 1-quart wide-mouth jar.
  • In a saucepan, bring vinegar, water, most of the onion slices, salt, pickling spice, and peppercorns to a rolling boil.
  • Pour the eggs in the jar, layer the remaining onion slices on top, seal the jar, and let it cool to room temperature for about 1 hour. Refrigerate for 3 days before enjoying.
