Tangy balsamic dressing with garlic, mustard, honey, and shallots pairs perfectly with a green salad topped with strawberries, toasted almonds, and feta cheese.
Ingredients:
  • 0.25 cup balsamic vinegar
  • 1.5 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 small shallot, peeled and chopped
  • 2 small cloves garlic, peeled
  • 0.5 cup olive oil
  • 1 head red lettuce leaves, rinsed, dried, and torn
  • 0.5 small red onion, peeled, cut into 1/2-inch-wide slivers
  • 0.25 cup sliced almonds, lightly toasted
  • 1 pint fresh strawberries, rinsed and sliced
  • 0.5 cup crumbled feta cheese
Instructions:
  • Prepare the dressing by combining balsamic vinegar, Dijon mustard, honey, shallot, garlic, salt, and pepper in a mini food processor. Blend until smooth. Gradually add olive oil while pulsing until well combined. Keep refrigerated until ready to use.
  • Distribute lettuce on 6 plates and garnish with red onion, almonds, strawberries, and feta cheese. Serve dressing separately.
