Create a flavorful empanada pie filled with savory beef, mushrooms, olives, and herbs for a time-saving and delicious meal.
Ingredients:
  • cooking spray
  • 1 medium onion, quartered
  • 3 cloves garlic
  • 2 tablespoons canola oil
  • 1 (8 ounce) package mushrooms, chopped
  • 0.5 cup pitted Kalamata olives
  • 1 tablespoon dried oregano
  • 2.5 teaspoons paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon crushed red pepper flakes
  • 0.125 teaspoon ground black pepper, or to taste
  • 1 pound 90% lean ground beef
  • 1 (15 ounce) package pie crusts
  • 1 small egg
  • 1 teaspoon water
Instructions:
  • Pulse onion in a food processor until medium chopped, then press garlic into the onion using a garlic press.
  • Heat a saute pan over medium-high heat. Add oil, onion, and garlic. Saute over medium heat until golden, about 5 minutes.
  • Add mushrooms to the food processor and pulse until finely diced. Mix them into the onion mixture and sauté for 3 to 4 minutes. In the meantime, finely chop the olives in the processor and keep them aside.
  • Sprinkle oregano, paprika, cumin, red pepper flakes, and pepper into the pan. Sauté until aromatic, for about 1 to 2 minutes. Crumble the ground beef into the pan and cook until fully browned, using a spoon or spatula to break it up further, around 5 to 8 minutes. Mix in the olives. Take the pan off the heat and let it cool for 20 to 30 minutes, stirring occasionally.
  • Preheat the oven to 425°F (220°C), then generously coat a 9-inch pie plate with cooking spray and gently press in 1 pie crust.
  • Gently transfer the chilled beef mixture into the crust, then cover with the second crust. Make small cuts in the top crust to allow steam to escape.
  • In a small bowl, whisk together the egg and water. Brush the entire surface of the pie generously with the egg wash.
  • Bake in the preheated oven for 45 to 50 minutes until the crust is a beautiful golden brown. Allow it to cool for 5 to 10 minutes before slicing and serving.
