Cheesy enchilada pasta ready in just 30 minutes, cooked in one pot for easy cleanup.
Ingredients:
  • 1 lb lean hamburger
  • 1/2 onion, chopped
  • 1 tablespoon from 1 container (6.25 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1 (4.5-ounce) can chopped green chiles
  • 2 (10-ounce) can red enchilada sauce
  • 1 (14.5-ounce) can chicken broth
  • 1/2 lb ziti noodles (about 2 cups)
  • 1/2 cup sour cream
  • 1 1/2 cups shredded mozzarella cheese
  • Optional toppings: tomatoes, avocados, sour cream, cilantro, olives, green onions
Instructions:
  • In a large skillet over medium heat, brown the hamburger. Add onions, green chiles, and taco seasoning. Cook for 3 minutes. Pour in enchilada sauce and chicken broth and bring to a boil. Stir in the noodles and reduce heat to low. Cover and simmer for 10-12 minutes, stirring halfway to prevent sticking.
  • Take the pot off the heat and gently stir in the sour cream and 1/2 cup of cheese. Sprinkle the remaining 1 cup of cheese on top, cover with the lid, and allow it to melt.
  • Sprinkle with your preferred toppings.
