Endive and grapefruit salad

Elevate your BBQ with this vibrant and refreshing fruit side dish!
Ingredients:
  • 1 large red grapefruit
  • 1 bunch baby endive, trimmed, cut into small sprigs
  • 1 large avocado, thinly sliced
  • 62.50 ml fresh flat-leaf parsley leaves
  • 2 tsp white balsamic vinegar
  • 5.90 gm dijon mustard
Instructions:
  • Peel and separate grapefruit, reserving 1 tablespoon of juice by squeezing the membrane over a bowl. Discard the membrane.
  • Combine grapefruit segments, endive, avocado, and parsley in a bowl. In a screw-top jar, combine olive oil, vinegar, mustard, and reserved grapefruit juice. Season with salt and pepper. Shake well to mix. Drizzle the dressing over the salad. Gently toss to coat evenly. Serve and enjoy.
