Decadent amaretto-infused crustless cheesecake, perfect with fresh fruit and whipped cream.
Ingredients:
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup unsalted butter, softened
  • 1.5 cups sour cream
  • 0.5 cup heavy whipping cream
  • 1.75 cups white sugar
  • 0.125 cup cornstarch
  • 1 fluid ounce amaretto liqueur
  • 5 eggs
  • 1 egg yolks
Instructions:
  • Allow ingredients to reach room temperature. Position oven rack in the middle of the oven and preheat to 375°F (190°C). Line the exterior of a 9-inch springform pan with foil and generously butter the interior.
  • In a large bowl, cream together smooth cream cheese and butter. Add sugar and cornstarch, then incorporate sour cream and whipping cream. Mix in amaretto and vanilla extract. Gradually blend in eggs and egg yolk, ensuring thorough integration after each addition. Pour batter into the prepared pan.
  • Transfer the mixture into the springform pan. Set the pan in a larger pan that's at least one inch wider than the cake pan. Pour warm water into the outer pan to make a water bath for the cake, which prevents cracks in your cheesecake. Bake in the center of the oven for 70 minutes.
  • Cool the oven with the door open for one hour. Afterward, chill the cake in the water bath for at least 3 hours before removing from the springform pan.
