Grilled peach and jalapeno stuffed pork cutlets - gourmet weeknight dinner in minutes with Panasonic CIO!
Ingredients:
  • 0.5 cup balsamic vinegar
  • 1 pound pork cutlets, thinly sliced
  • 3 fully cooked andouille sausages, diced
  • 0.25 cup diced onion
  • 0.25 cup chopped jalapeno
  • 2 peaches, pitted and chopped into 1/4-inch pieces
  • 0.5 cup diced apple
  • kitchen twine
Instructions:
  • Preheat your oven to 400°F (200°C) with a grill pan inside, or preheat a countertop induction oven on medium heat with the grill pan in place.
  • In a saucepan, heat balsamic vinegar until boiling, then simmer over low heat for 10 to 15 minutes until it thickens into a glaze.
  • Tenderize pork cutlets until they are 1/2-inch thick using a mallet.
  • Sauté sausage, onion, and jalapeno in a skillet over medium heat until onion is slightly translucent and sausage is cooked through, approximately 5 minutes. Introduce peaches and apple to the skillet; continue cooking and stirring until the fruit is softened, about 5 minutes. Top with roughly 1 tablespoon of balsamic glaze and stir well.
  • Fill each pork cutlet with the delicious filling, saving any extra in the skillet. Roll up and secure with roasting twine. Grill the pork on a heated grill pan and then return it to the oven.
  • Place the pork in the preheated oven or on a medium heat grill, turning halfway through, until the pork is fully cooked and nicely browned on the outside, about 20 to 25 minutes in the oven or 15 minutes on the grill.
  • Drizzle balsamic glaze over the remaining filling in the skillet and gently heat, stirring occasionally until warmed through. Serve by spooning the filling over the cooked stuffed pork.
