Erika's "Frango" Mints

Traditional family recipe for delicious Frango® mints, ideal for gifting during the holidays or as a thoughtful hostess gift.
Ingredients:
  • 1 (12 ounce) bag chocolate chips
  • 1.5 cups confectioners' sugar
  • 0.5 cup egg substitute
  • 0.25 cup butter, softened
  • 1 teaspoon mint extract
  • 1 teaspoon vanilla extract
Instructions:
  • Place a layer of waxed paper on a baking sheet or plate.
  • Gently melt chocolate in a double boiler over simmering water. Stir often and use a rubber spatula to scrape down the sides for a smooth consistency.
  • In a bowl, use an electric mixer to beat confectioners' sugar, egg substitute, and butter until smooth and creamy. Mix in melted chocolate until well combined. Stir in mint extract and vanilla extract until the mixture is light and fluffy.
  • Spoon generous dollops of the chocolate mixture onto the baking sheet. Refrigerate until solid, for a minimum of 4 hours.
