Spicy peanut chicken and green beans over rice.
Ingredients:
  • 1 cup uncooked long grain white rice
  • 2 cups water
  • 1 pound fresh green beans, trimmed and snapped
  • 2 teaspoons olive oil
  • 1 pound skinless, boneless chicken breast halves - cut into chunks
  • 0.75 cup low-sodium chicken broth
  • 0.33333334326744 cup smooth peanut butter
  • 2 teaspoons honey
  • 1 tablespoon low sodium soy sauce
  • 1 teaspoon red chile paste
  • 2 tablespoons lemon juice
  • 3 green onions, thinly sliced
  • 2 tablespoons chopped peanuts
Instructions:
  • In a pot, bring the rice and water to a boil, then lower the heat, cover, and let it simmer for 20 minutes.
  • Steam the green beans in a pot with a steamer basket over boiling water for about 10 minutes until tender yet crisp.
  • In a skillet, heat the oil and cook the chicken for 5 minutes on each side, or until clear juices appear.
  • Combine chicken broth, peanut butter, honey, soy sauce, chile paste, and lemon juice in a saucepan over medium heat. Stir and cook for 5 minutes until slightly thickened. Add green beans, then serve over rice. Top with green onions and peanuts as a garnish.
