Espresso and pecan self-saucing pudding

Coffee enhances indulgent desserts with rich flavor and irresistible aroma.
Ingredients:
  • 80g butter, chopped
  • 125ml milk
  • 150g self-raising flour
  • 100g brown sugar
  • 1 egg, lightly whisked
  • 53.60 gm golden syrup
  • 70g pecan
  • Double cream or ice-cream, to serve
  • 150g brown sugar
  • 125ml espresso
  • 185ml water
  • 125ml cream
  • 40g butter, chopped
Instructions:
  • Preheat the oven to 180°C, then generously grease a 6-cup (1.5L) ovenproof dish with melted butter and set it on an oven tray.
  • In a small saucepan over low heat, gently melt the butter with the milk, stirring occasionally. In a medium bowl, combine the flour and sugar. Add the melted butter mixture, egg, and golden syrup, stirring until just mixed. Transfer the batter to the prepared dish and top with pecans.
  • Prepare a rich coffee sauce by mixing sugar, coffee, water, cream, and butter in a jug. Stir until the butter melts and the mixture is smooth. Drizzle the sauce evenly over the pudding mixture in the dish.
  • Place the pudding in the preheated oven and bake for 30 minutes, or until the center is cooked. Take out of the oven and let it rest for 5 minutes before serving with cream or ice-cream.
