Easy and flavorful Esquites made with frozen corn, inspired by Mexican street corn. Customize with cayenne pepper or hot sauce for a spicy twist.
Ingredients:
  • 3 Tablespoons unsalted butter
  • 1 (2 pound) bag frozen corn kernels, thawed and drained
  • 1/4 cup lime juice
  • 1 1/2 teaspoons chili powder
  • 1/4 cup mayonnaise
  • 1/4 cup crumbled cotija cheese
  • lime wedges (optional)
Instructions:
  • In a soup pot over medium-high heat, melt butter until sizzling, then stir in the corn and cook until hot, about 8 minutes.
  • Add the zesty lime juice and spicy chili powder, cook until the lime juice almost disappears, approximately 2 minutes. Gently blend in the creamy mayonnaise and continue cooking for another 2 minutes. Remove from heat.
  • Scoop into serving cups and sprinkle cotija and cilantro on top. Accompany with lime wedges for serving.
