Colorful vegetable beef stir-fry with asparagus, mushrooms, and red bell peppers; served over rice.
Ingredients:
  • 0.5 cup soy sauce
  • 0.33333334326744 cup rice wine vinegar
  • 0.33333334326744 cup minced garlic
  • 1 tablespoon sesame seeds
  • 1 pound round steak, thinly sliced
  • 0.25 cup peanut oil
  • 2 cups 1-inch sliced asparagus
  • 1 cup sliced fresh mushrooms, or more to taste
  • 1 sweet onion, chopped
  • 1 red bell pepper, sliced
  • 1 bunch green onions, chopped into 1-inch pieces
  • 1 cup whole cashews
  • 1 tablespoon cornstarch
Instructions:
  • In a bowl, combine soy sauce, sugar, rice wine vinegar, garlic, and 1 tablespoon sesame seeds. Transfer the mixture to a resealable plastic bag. Add beef, ensuring it's coated with the marinade, then remove excess air, seal the bag, and refrigerate overnight.
  • In a wok or large skillet, heat peanut oil over medium-high heat. Sear beef with marinade until well-browned, about 5 minutes. Toss in asparagus, mushrooms, onion, bell pepper, and green onions; stir-fry until veggies start to soften, 3 to 4 minutes. Mix in cashews and 1 tablespoon sesame seeds; cook until veggies are tender, about 2 to 3 minutes.
  • Combine cornstarch and water in a small bowl, then stir into the beef stir fry until the sauce thickens, approximately 3 minutes. Finish by sprinkling with the remaining 1 tablespoon of sesame seeds.
