Essanaye's Sesame Beef Stir Fry

Colorful vegetable beef stir-fry with asparagus, mushrooms, and red bell peppers; served over rice.
Ingredients:
0.5 cupsoy sauce
0.33333334326744 cuprice wine vinegar
0.33333334326744 cupmincedgarlic
1tablespoonsesame seeds
1poundround steak, thinly sliced
0.25 cuppeanut oil
2cups 1-inch sliced asparagus
1cupslicedfresh mushrooms, or more to taste
1sweet onion, chopped
1red bell pepper, sliced
1bunchgreen onions, chopped into 1-inch pieces
1cupwhole cashews
1tablespooncornstarch
Instructions:
In a bowl, combine soy sauce, sugar, rice wine vinegar, garlic, and 1 tablespoon sesame seeds. Transfer the mixture to a resealable plastic bag. Add beef, ensuring it's coated with the marinade, then remove excess air, seal the bag, and refrigerate overnight.
In a wok or large skillet, heat peanut oil over medium-high heat. Sear beef with marinade until well-browned, about 5 minutes. Toss in asparagus, mushrooms, onion, bell pepper, and green onions; stir-fry until veggies start to soften, 3 to 4 minutes. Mix in cashews and 1 tablespoon sesame seeds; cook until veggies are tender, about 2 to 3 minutes.
Combine cornstarch and water in a small bowl, then stir into the beef stir fry until the sauce thickens, approximately 3 minutes. Finish by sprinkling with the remaining 1 tablespoon of sesame seeds.
