Ingredients:
3cups rotelle pasta
3 hard-cooked eggs, chopped
1 (12 ounce) cantuna, drained and flaked
0.75 cupshreddedCheddar cheese
0.75 cupchoppedcelery
0.25 cupfinely choppedonion
0.5 cuproasted red peppers, drained and chopped
1 (8 ounce) canlima beans, drained
0.75 cupmayonnaise
0.5lemon, juiced
0.5 teaspoonpaprika
salt to taste
Instructions:
Bring a large pot of perfectly salted water to a boil, then add the pasta and cook for 8 to 10 minutes until it's al dente. Drain and let it cool.
Combine pasta, eggs, tuna, Cheddar cheese, celery, onion, roasted red pepper, and lima beans in a large bowl. Whisk together mayonnaise, lemon juice, and paprika, then season with salt. Pour the dressing over the pasta mixture and mix well.
