Savor the flavors of spicy Italian sausage and zesty zucchini simmered in rich tomato sauce.
Ingredients:
  • 5 (3.5 ounce) links hot Italian sausage links
  • 1 tablespoon olive oil
  • 1 green bell pepper, chopped
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon salt
  • ground black pepper to taste
  • 2 (14.5 ounce) cans crushed tomatoes
  • 2 zucchinis, sliced
Instructions:
  • Preheat a skillet over medium heat. Cook sausages until fully cooked, turning occasionally, about 10 minutes. Use an instant-read thermometer to check the internal temperature, which should read 160 degrees F (70 degrees C). Transfer sausages to a cutting board and slice.
  • In a skillet, heat olive oil over medium heat. Sauté onion, bell pepper, and garlic until tender, around 5 minutes. Season with red pepper flakes, salt, and pepper. Stir in sausage, crushed tomatoes, and zucchini. Simmer until zucchini is tender, about 10 minutes.
