Evin's Indian Apricot Chicken

Tender chicken cooked with apricot preserves, garam masala, and lime zest for a sweet and spicy South Asian twist.
Ingredients:
  • 1 pound chicken tenders, cut into bite-size pieces
  • 2 teaspoons garam masala
  • 1 teaspoon garlic powder
  • salt and black pepper to taste
  • 0.5 yellow onion, finely diced
  • 1.5 cups chicken stock, or as needed
  • 1 cup apricot preserves
  • 0.25 cup white vinegar
  • 1 teaspoon hot pepper sauce (such as Tabasco®)
  • 1 teaspoon lime zest
  • 1 tablespoon butter
Instructions:
  • Season the chicken with aromatic garam masala, garlic powder, salt, and pepper, then let it rest. Heat olive oil in a skillet over medium heat. Sauté onions until tender, for approximately 5 minutes. Add the seasoned chicken and stir until it's cooked through. Set the fragrant mixture aside.
  • Add 1 cup of chicken stock to the pan and simmer. Deglaze the pan by scraping up the brown bits. Mix in apricot preserves and vinegar. Adjust consistency with the rest of the chicken stock. Season with hot sauce. Return chicken to pan; simmer for 10 minutes. Add lime zest and butter just before serving.
