Wholesome Ezekiel bread: DIY with mixed whole grains and legumes for a nutritious loaf.
Ingredients:
4cups warm water (110 degrees F/45 degrees C)
1cuphoney
0.5 cupolive oil
2 (.25 ounce) packagesactive dry yeast
2.5 cups wheat berries
1.5 cups spelt flour
0.5 cupbarley
0.5 cupmillet
0.25 cupdry green lentils
2tablespoons dry great Northern beans
2tablespoons dry kidney beans
2tablespoons dried pinto beans
2tablespoons salt, or to taste
Instructions:
Combine water, honey, olive oil, and yeast in a large bowl and allow it to rest for 3 to 5 minutes.
Combine wheat berries, spelt flour, barley, millet, lentils, great northern beans, kidney beans, and pinto beans, mix thoroughly, and grind in a flour mill.
Combine the fresh milled flour mixture and salt with the yeast mixture, stirring vigorously until well incorporated for about 10 minutes, until a loose dough forms.
Divide the dough evenly between two greased 9x5-inch loaf pans.
Allow the dough to proof in a cozy spot until it fills the pan, approximately 1 hour.
Preheat the oven to 350°F (175°C) for the perfect baking temperature.
Crisp up the loaves in the preheated oven until they turn a lovely golden brown, which should take about 45 to 50 minutes.
