Norwegian fårikål: Slow-braised lamb and cabbage with peppercorns.
Ingredients:
  • 8 ounces sliced lamb meat
  • 1 head cabbage, cored and sliced
  • 1.5 tablespoons whole black peppercorns
Instructions:
  • Start by elegantly layering sliced lamb on the base of a Dutch oven or soup pot, followed by a layer of cabbage. Continue layering until you reach the top, seasoning with salt to your liking. Bundle peppercorns in a piece of cheesecloth and place it in the center of the pot. Finally, add water, cover with a lid, and let magic unfold.
  • Bring the mixture to a lively boil, then let it gently simmer over low heat for 2 hours. Remember to remove the peppercorns before serving.
