Flavorful meatballs made with Dijon mustard and spices, perfect for trying bison.
Ingredients:
  • 8 ounces ground bison
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon paprika
  • 0.125 teaspoon dried sage
  • 1 pinch celery salt, or to taste
  • 2 teaspoons olive oil
Instructions:
  • Combine bison with mustard, oregano, cumin, onion powder, paprika, sage, and celery salt in a bowl, then shape into 1 1/2-inch diameter meatballs.
  • Warm olive oil in a non-stick skillet over gentle heat, ensuring the bottom is coated. Place meatballs in the skillet and let cook untouched for roughly 4 minutes. Rotate meatballs regularly until nicely browned on all sides, around 6 minutes. Confirm they are fully cooked by checking with an instant-read thermometer, which should register at least 160 degrees F (70 degrees C) in the center.
