Pistachio cucumber salad: a fresh twist that everyone will love!
Ingredients:
  • 2 cucumbers - peeled, seeded, and diced
  • 1 pinch salt, or as needed
  • 1 onion, diced
  • 0.25 cup crushed pistachios, or to taste
  • 1 lemon, juiced and zested
  • 2 cloves garlic, pressed
  • 0.125 teaspoon ground black pepper
  • 0.125 teaspoon cayenne pepper
  • 3 tablespoons low-fat Greek-style yogurt, or to taste
  • 4 lettuce leaves
  • 4 small tomatoes, quartered
Instructions:
  • Place cucumbers in a colander, sprinkle with salt, and let sit for 30 minutes to draw out excess water.
  • Remove excess salt from cucumbers by patting them dry. Combine cucumbers, onion, pistachios, lemon juice, zest, garlic, black pepper, and cayenne pepper in a bowl. Stir in the yogurt.
  • Line a serving bowl with fresh lettuce leaves. Pour the cucumber mixture into the center of the bowl, surrounded by the vibrant tomatoes. Chill in the refrigerator for at least 30 minutes to let the flavors meld beautifully.
