Fallen Chocolate Souffle Mini Cakes

Decadent and airy chocolate souffle cakes. A quick and satisfying sweet treat.
Ingredients:
  • 4 eggs, separated
  • 1 tablespoon white sugar, divided
  • 1 (16 ounce) package semisweet chocolate chips (such as Nestle® TOLL HOUSE® Semi-Sweet Chocolate Morsels)
  • 0.5 cup unsalted butter
  • 1 tablespoon hot water
  • 1 teaspoon all-purpose flour
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and lightly grease 6 glass custard cups. Arrange the cups on a baking sheet.
  • Whisk egg whites and sugar in a bowl with an electric mixer until stiff peaks form, about 4 to 5 minutes.
  • Melt chocolate chips and butter in a pot over low heat, stirring occasionally for about 5 minutes. Remove from heat. Gradually stir in one egg yolk at a time. Add water and flour, stirring constantly. Gently fold in the beaten egg whites. Fill each custard cup about 2/3 full with batter.
  • Bake in the preheated oven for 15-18 minutes, until cakes rise slightly and cracks appear on the surface.
