Greek Fanouropita Cake: Moist and flavorful treat with olive oil, orange juice, walnuts, and raisins. Stays fresh for days.
Ingredients:
  • 1.375 cups olive oil
  • 1.5 cups freshly squeezed orange juice
  • 2 tablespoons brandy
  • 5.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1.25 cups chopped walnuts
  • 1 cup Thompson seedless raisins
  • 1 teaspoon ground cinnamon
  • 2 tablespoons sesame seeds
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 12-inch round springform pan.
  • In a large bowl, mix together olive oil, orange juice, and brandy. Stir in sugar. In another bowl, sift together flour, baking soda, and baking powder, then combine with the oil mixture. Fold in walnuts, raisins, cinnamon, and cloves. Pour batter into a prepared springform pan, smooth the top, and sprinkle with sesame seeds.
  • Bake in the preheated oven for 45-60 minutes or until a skewer inserted in the center comes out clean.
