Farro with Swiss Chard and Radicchio

Savory farro dish with caramelized onions, garlic, sautéed Swiss chard, and radicchio.
Ingredients:
  • 4 tablespoons extra virgin olive oil, divided in half
  • 1 medium onion, diced, about 1 1/2 cups
  • 6 cloves garlic, peeled and lightly crushed
  • 1 teaspoon kosher salt
  • 2 cups (1/2 pound) pearled farro
  • 4 cups water
  • 1 teaspoon fresh thyme leaves, minced, or 1/2 teaspoon dried thyme
  • 2 bay leaves
  • 2 cups Swiss chard, sliced (center ribs removed)
  • 2 cups radicchio, sliced
  • 1 teaspoon fresh rosemary, minced, or 1/2 teaspoon dried rosemary
Instructions:
  • In a large pot over medium-high heat, warm 2 tablespoons of olive oil. Cook onions until softened, about 3 to 4 minutes. Mix in garlic and cook for an additional 3 minutes on medium heat.
  • Combine farro with water, bay leaves, thyme, and salt in a pot. Bring to a simmer over high heat, then reduce heat to low, cover, and cook for 20 to 25 minutes until the farro is tender.
  • Prepare the Swiss chard and radicchio while the farro is cooking.
  • Transfer the cooked farro to a sheet pan to cool. Check the moisture level in the pot after removing the lid, and if there is excess water, bring it to a boil over high heat to evaporate it. You can choose to discard the garlic cloves or keep them with the farro based on your preference. Don't forget to remove the bay leaves before serving.
  • In the pan used for the farro, heat 2 tablespoons of olive oil over medium-high heat. Add Swiss chard and cook until slightly wilted. Add radicchio, salt, and rosemary, cook until wilted. Remove from heat.
  • Mix cooked farro into the sautéed greens: Combine the farro with the Swiss chard and radicchio in the pot. Adjust seasoning to taste, adding more salt if desired, and serve.
