Scandinavian filled buns for a festive Fat Tuesday celebration.
Ingredients:
  • 3 (0.6 ounce) cakes compressed fresh yeast
  • 1 cup warm milk (110 degrees F/45 degrees C)
  • 0.5 cup melted butter
  • 2 eggs
  • 1.5 teaspoons salt
  • 2 teaspoons white sugar
  • 4 cups all-purpose flour, or as needed
  • 1 cup milk
  • 2 tablespoons white sugar
  • 1 teaspoon vanilla extract
  • 1 beaten egg
  • 0.75 cup confectioners' sugar
  • 1 tablespoon hot water
  • 2 tablespoons cocoa powder
Instructions:
  • In a small bowl, mix yeast with warm milk and let it sit until foamy. Combine butter, 2 eggs, salt, 2 teaspoons sugar, and yeast mixture until sugar dissolves. Add flour to make a smooth dough. Cover and let rise in a warm place until doubled in size, approximately 30 minutes.
  • While stirring constantly, heat 1 cup of milk and cornstarch in a small saucepan until very hot and steaming, just before simmering. In a separate bowl, beat 2 eggs and 2 tablespoons sugar until smooth. Gradually mix in half of the hot milk mixture, incorporating about 2 tablespoons at a time. Combine egg mixture with milk in the saucepan, cooking gently until thick and starting to bubble. Take off the heat, stir in vanilla extract, and allow the filling to cool.
  • Preheat your oven to 425 degrees F (220 degrees C) and prepare 2 baking sheets with parchment paper.
  • Gently deflate the dough, then separate it into two portions. Roll each portion into a 12x12 inch square and cut it into 9 equal pieces measuring roughly 4 inches on each side. Put around 1 tablespoon of the filling in the center of each piece. Fold one corner over the filling, followed by the opposite corner, and seal the edges. Fold the remaining two corners over the filling and seal them to create a neat packet with the filling enclosed.
  • Arrange the filled buns on the baking sheets with the folded sides facing down. Gently brush each bun with beaten egg. Bake in the preheated oven for 15 minutes until they turn a lovely golden brown color, then allow them to cool.
  • Combine the confectioners' sugar, hot water, and cocoa powder in a bowl until smooth, then generously spread the icing on each bun. Chill any remaining buns in the refrigerator.
