Crunchy pita bread bites mixed with romaine, green onions, cucumber, tomatoes, and zesty Middle Eastern dressing - a vibrant fatoosh salad!
Ingredients:
  • 2 pita breads
  • 8 leaves romaine lettuce, torn into bite-size pieces
  • 2 green onions, chopped
  • 1 cucumber, chopped
  • 3 tomatoes, cut into wedges
  • 0.25 cup chopped fresh parsley
  • 1 clove garlic, peeled and chopped
  • 2 tablespoons sumac powder
  • 0.25 teaspoon ground black pepper
  • 0.25 cup chopped fresh mint leaves
Instructions:
  • Preheat your oven to 350°F (175°C) for perfect baking results.
  • Bake pitas in the preheated oven for 5 to 10 minutes until crispy. Break into bite-sized pieces after removing from oven.
  • Combine crisp toasted pita, crunchy romaine lettuce, zesty green onions, refreshing cucumber, and juicy tomatoes in a large bowl. Blend well.
  • Combine parsley, garlic, sumac, lemon juice, olive oil, salt, pepper, and mint in a small bowl. Drizzle over pita mixture right before serving and gently mix to combine.
