Traditional Norwegian deep-fried pastries known as "Fattigmann Bakkels" have been enjoyed for over a century, translating to "Poor Man's Cakes".
Ingredients:
  • 1 egg
  • 3 egg yolks
  • 0.25 cup heavy cream
  • 4 teaspoons white sugar
  • 1 tablespoon butter, melted
  • 0.25 teaspoon ground cardamom
  • 4 cups lard for frying
Instructions:
  • Combine egg and yolks in a large bowl, followed by cream, sugar, melted butter, and cardamom. Gradually add flour until a soft dough forms, being careful not to overmix to maintain a tender texture for the cookies.
  • Preheat oil in a deep skillet to 375 degrees F (190 degrees C). Roll out the dough on a floured cloth to 1/8 inch thickness, then cut into 2x2 inch diamond shapes.
  • Fry in hot lard until lightly browned, then drain on paper and sprinkle with confectioners' sugar once cool. Ensure the cookies are evenly sized and shaped, avoiding frying them too dark or too light.
