Make creamy basil-tomato soup by simmering crushed tomatoes, basil, chicken broth, cream, and butter.
Ingredients:
  • 2 (28 ounce) cans crushed tomatoes
  • 1 (14.5 ounce) can chicken broth
  • 18 fresh basil leaves, or more to taste, finely chopped
  • 1 teaspoon white sugar
  • 1 cup heavy whipping cream
  • 0.5 cup butter
Instructions:
  • Combine the tomatoes and chicken broth in a large saucepan. Bring to a boil, then simmer on medium-low heat until slightly reduced, approximately 10 minutes.
  • Combine fresh basil leaves and a touch of sugar into the flavorful tomato mixture. Simmer over low heat until the basil is beautifully wilted, typically around 5 minutes.
  • Incorporate the cream into the tomato mixture, then add the butter and cook, stirring occasionally, until the butter melts completely, for an additional 5 to 7 minutes.
