Discover the tantalizing flavors of Brazilian cuisine with just one pot!
Ingredients:
  • 1kg dried black beans (Brazilian black beans)
  • 1kg pork sausages, coarsely chopped
  • 1 large ripe tomato
  • 5 bacon rashers, rind removed, finely chopped
  • 2 small brown onions, halved, finely chopped
  • 2 garlic cloves, crushed
  • Steamed white rice, to serve
  • Orange segments, to serve
Instructions:
  • In a large bowl, submerge the beans in cold water and cover with plastic wrap. Allow them to soak for 3-4 hours or overnight. Rinse well under cold water, then transfer them to a saucepan. Cover the beans with cold water, bring to a boil, then reduce heat to low. Simmer covered for about an hour, stirring occasionally, until the beans are soft.
  • Combine the sausage with the beans and simmer gently for 45 minutes until the beans are tender, stirring occasionally. Add a splash of hot water if needed to reach your desired consistency.
  • Make a shallow cross at the base of the tomato. Submerge it in a heatproof bowl filled with boiling water and let it sit for 5 minutes to loosen the skin. Drain the tomato, peel off and discard the skin, then finely chop the flesh.
  • Preheat a non-stick frying pan over medium-high heat. Cook the bacon, stirring occasionally, for 4-5 minutes until it turns golden. Drain on a paper towel-lined plate.
  • In the same pan with the flavorful bacon drippings, sauté the onion and garlic until the onion is soft, about 5 minutes. Add back the crispy bacon, then stir in the tomato and cook until softened, about 10 minutes.
  • Using a slotted spoon, transfer 2-3 tablespoonfuls of the bean mixture to the tomato mixture. Mash the beans with a wooden spoon over medium heat for 5 minutes until a thick paste forms. Add the tomato mixture to the rest of the beans and cook, stirring occasionally, for an additional 5 minutes until the stew thickens.
  • Take out the sausage from the stew and place it on a serving platter. Serve the bean mixture in a bowl alongside the sausage, steamed rice, and orange.
