Brazil's national dish, Feijoada, is a rich black bean stew with meat, garlic, and tomatoes, served over rice. Perfect for cozy winter nights, pair it with collard greens for a satisfying meal.
Ingredients:
  • 1 pound (450g) dry black beans
  • 4 tablespoons extra virgin olive oil
  • 1 pound (450g) pork shoulder, cut into chunks
  • 2 large onions, sliced
  • 1 head of garlic, peeled and chopped
  • 1 pound (450g) carne seca or corned beef, cut into chunks
  • 1/2 pound (225g) fresh sausages, such as chorizo or Italian sausage
  • 1 pound (450g) smoked sausage, such as linguica or kielbasa
  • 1 smoked ham hock or shank
  • 3-4 bay leaves
  • Water
  • 1 14.5 ounce can (411g) of crushed tomatoes
  • Kosher salt
Instructions:
  • Hot water will awaken the flavors of the black beans: Cover the black beans with boiling water and set aside while you proceed with the stew.
  • In a large pot over medium-high heat, sear the pork shoulder in olive oil until golden brown. Remove and set aside.
  • In a pot, cook onions until browned, stirring occasionally to scrape up any bits. Sprinkle with salt, add garlic, and sauté for 2 minutes.
  • Combine the meats and bay leaves in a pot. Pour enough water to cover everything. Cover the pot and bring it to a simmer. Allow it to cook gently for 1 hour.
  • Add the drained soaked black beans to the stew and simmer gently, covered, until tender, for about an hour and a half.
  • Combine the tomatoes, stir thoroughly, and season with salt to taste. Simmer uncovered until the meat becomes tender, about 2 to 3 hours. Serve with white rice and hot sauce. Add sautéed collard greens as a classic side dish.
