Delicious Brazilian feijoada with flavorful meats, a must-try dish loved by all in Brazil. Customize with extra meats for an extra special twist!
Ingredients:
  • 1 tablespoon olive oil
  • 1.5 cups chopped onion, divided
  • 0.5 cup green onions, chopped
  • 1 clove garlic, chopped
  • 1 (12 ounce) package dry black beans, soaked overnight
  • 2 smoked ham hocks
  • 8 ounces diced ham
  • 0.5 pound thickly sliced bacon, diced
  • 2 bay leaves, crushed
  • 0.125 teaspoon ground coriander
  • salt and pepper to taste
  • 0.5 cup chopped fresh cilantro
  • 0.25 cup chopped fresh parsley
Instructions:
  • In a large pot or Dutch oven, heat oil, then sauté 3/4 cup chopped onion, green onions, and garlic until softened, around 4 minutes. Add soaked beans and enough water to cover by 3 inches. Once boiling, lower heat to medium-low and simmer uncovered for 2 hours until tender.
  • Once the beans are cooking, add ham hocks and 1/4 cup chopped onion to a smaller pot. Cover with water and simmer for about 1 hour until the meat pulls off the bone easily. Drain and mix into the beans.
  • Preheat the oven to 375°F (190°C) while you prepare the rest of the recipe.
  • Arrange the ham, bacon, and the rest of the onion in a baking dish. Bake until deliciously crispy, about 15 minutes.
  • After draining the flavorful bacon and ham mixture, gently mix it in with the beans. Season the mixture with fragrant bay leaves, aromatic coriander, and a pinch of salt and pepper. Let it simmer uncovered for an additional 30 minutes to deepen the flavors.
  • Add the fresh flavors of chopped cilantro and parsley right before serving.
