Fennel, crab & orange salad

Vibrant crab salad with sweet orange, fresh mint, and spicy chili.
Ingredients:
  • 1 bulb of fennel
  • 2 oranges
  • 2 fresh sprigs of mint
  • 1 ripe avocado
  • ½ a fresh green chilli
  • 100 g white crabmeat, from sustainable sources
  • 2 tablespoons extra virgin olive oil
Instructions:
  • Begin by trimming the fennel and thinly slicing it using a mandolin. Place the slices in a bowl of iced water. Next, peel and slice 1½ oranges and arrange them on a platter. Tear the mint leaves, destone the avocado, slice, and scoop out the flesh. Dice the chili. Arrange the fennel, crabmeat, mint, avocado, and chili on the platter. In a separate bowl, mix the remaining orange juice with oil. Season generously with sea salt and black pepper, then drizzle the dressing over the salad. Serve immediately.
