Citrusy fennel salad with red grapefruit, apple, walnuts, and basil in a tangy dressing.
Ingredients:
  • 2 bulbs fennel, trimmed and thinly sliced
  • 0.5 red onion, thinly sliced
  • 1 green apple, peeled and thinly sliced
  • 1 teaspoon lemon juice
  • 1 red grapefruit - peeled, white pith cut off, and sectioned
  • 2 tablespoons chopped toasted walnuts, or to taste
  • 1 tablespoon torn basil leaves, or to taste
  • 2 teaspoons lemon juice, or to taste
  • 2 teaspoons lime juice, or to taste
  • 2 teaspoons grapefruit juice, or to taste
  • 0.25 cup extra-virgin olive oil, or to taste
  • salt and ground black pepper to taste
Instructions:
  • Arrange fennel, onion, and apple slices beautifully in a salad bowl. Drizzle sliced apple with a teaspoon of fresh lemon juice. Garnish the salad with red grapefruit sections, toasted walnuts, and basil leaves.
  • Combine 2 teaspoons of lemon juice with lime juice, grapefruit juice, and olive oil in a small bowl. Season with salt and black pepper, then drizzle the dressing over the salad before serving.
