Fennel, thyme and parmesan gratin

Baked fennel with creamy herb crumble is a perfect pairing for roasted meats.
Ingredients:
  • Melted butter, to grease
  • 1 fennel bulb, top trimmed, cut lengthways into 3cm slices
  • 25g (1/3 cup) fresh breadcrumbs (made from day-old bread)
  • 20g (1/4 cup) finely grated parmesan
  • 40g butter, chopped
  • 6 sprigs fresh thyme, leaves picked
  • 125ml (1/2 cup) pouring cream
Instructions:
  • Prepare a baking dish by brushing it with rich, melted butter. Simmer the fennel in a pot of boiling water for 10 minutes or until it reaches a tender consistency, then drain it.
  • Preheat the oven to 180°C. Spread the fennel on the bottom of the dish. Sprinkle with breadcrumbs, parmesan, butter, and thyme. Pour cream over the top. Bake until golden brown, about 15 minutes. Season with salt and pepper to taste.
