This salad is a delightful and effortless dish.
Ingredients:
  • 42.00 gm fresh orange juice
  • 20.00 ml red wine vinegar
  • 5.00 gm caster sugar
  • 1 treviso, leaves separated, torn
  • 500.00 ml baby rocket leaves
  • 1 small fennel bulb, trimmed, thinly sliced
  • 1 orange, peeled, coarsely chopped
Instructions:
  • In a jug, blend together the orange juice, oil, vinegar, and sugar.
  • In a bowl, mix together the treviso, rocket, fennel, and orange. Pour in the dressing, sprinkle with salt and pepper, then toss everything together until well coated.
